FS does not do a good job of modeling it, my planes yaw uncontrolably to one side.

Ya, good luck with one engine taxi in FS9.

Anyone know if FSX models this better? How is Level-D 767 in FSX doing one engine taxi?

I have taxied the Level-D, PMDG B-737 and the MD-88 on one engine with no problem. You will need to counter with some opposite steering (rudder) and do not use aggressive throttle movements.

Don't try it with turboprops. In FS it is nearly impossible to do a single engine turboprop taxi.
