How does ACARS log our flight time?
Wheels up to wheels down? Taxi to taxi? Engine start to engine shutdown? Load up to disconnect?

And if we are one of the few pilots who don't use ACARS, what time should we be logging?

It is from the time you hit "start flight", to the time you hit "end flight". lol
no, its is from startup, at the the gate to shutdown at the destination's gate

So........... I could load up at KSLC, wait 3 hours, fly to KPIH and ACARS would show it as 4.2 hours?

That doesn't seem right!

The time, I believe is gate-to-gate, including taxi time. It shouldn't matter about "start flight". ACARS will know when you push back, and start to taxi, and when upon arrival, you stop at the terminal and shut down the engines. Shiny side up...

John is right. It's from the time you hit "Start Flight" to "End Flight." It does not start automatically.

doesn't it connect through FSUIPC and start when it first detects your plane moving to the time you hit end flight

Your connection time is different than fligh time. Your flight time is wheels up to Wheels down. You can look at all the specifics about time WRT your flight on the left hand side:
