Iain, there are plenty of aircraft that you can fly, you can got to websites such as flightsim, simviation, or avsim and download most of the ones not in the fleet library, or use the FSX default aircraft. You are not required to use the fleet aircraft by any means when you fly (with the exception of some checkrides).
