Hi Sean and welcome! Very happy you're a part of our fine group of flight simulator enthusiasts!
Once you reach captain by completed 10 valid flights in the 737, take and pass the captain's test, and pass the 737 checkride, you'll be eligible to request additional ratings or transfer to the 727 program...uh....another program up or down one stage. 
You have 6 flights so far. Be sure to use ACARS, fly about 200 miles or longer, and do not use time acceleration. Then, you can go in the Go to the Pilot Center and there will be an option to take the captain's exam. Then you will be assigned the 737 check ride.
Once you pass, you can request additional ratings via the Pilot Center and you're on your way!
