Since there are very few DVA flights listed for the L-10, and I usually use the Delta timetable to pick flights; can I fly the L-10 on routes listed as 757, 767 and 777's?

I'm guessing yes as long as the L-10 can make it on fuel.

Yup. As long as your chosen L-1011 can make it on fuel (and remember, the -100 is a lot shorter-ranged than the -500), if you've got the rating, you can sub it on an appropriate route.
