Jim, of course you can as long as the aircraft can handle the route's range and everything like that.
For example, I like to fly the 727 for CRJ routes. As long as the a/c can handle the route, I think you'll be fine.

you have to be rated in the airplane you fly, and it must be physically capable of making the flight, range wise. So, no B738s flying from Atlanta to Paris...
If you found a route that a 767 flies, and your 738 can get there, go for it.

George, if you look at my log book, you will see that I have a PIREP from KATL-LFPG. I had favoriable winds the whole flight, but I wouldn't reccomend that, because it is nearly impossible to do. I was luckey when I did it.

Under current rules that flight would be rejected, for the range as published by Boeing is less than the flight regardless of winds or not, and since ACARS was not used it cannot be determined if you landed with 1.5 hrs of reserve fuel.
