Even though I am not yet rated for the 737, I want to fly it online w/VATSIM to get the hang and feel of her, using real ATC before I take my checkride offline on ACARS. I know these flights wont count towards my Capt's promotion in the 737 until the passing of the checkride, but is it acceptable to do with DVA and using ACARS?

You should check the box "this is a training flight" - it will not count as a DVA flight but you can use ACARS using that method

Sure, just check the box that says "training flight" and you'll get all of the benefits of acars but it won't file the flight. Edit- George beat me to it.
